Vindaloo, usually the hottest dish at an Indian restaurant. It's a tomato-chili-mustard sauce, that make a great base for meat stew or use it as a grilling rub. For a marinade, make a paste with equal parts vinegar and seasoning. Also addicting on roasted cauliflower.
