Whole Pods vs. Splits: What’s the Difference?

Our vanilla splits are an industry seconds product, ideal for making extract, paste, and powder due to their very low moisture content. These beans are often dry, brittle, and may come in pieces—easily snapped with your fingers. Because of this, they aren’t suitable for baking or scraping out vanilla caviar.

In contrast, our whole beans are soft, pliable, and perfect for culinary use. You can easily cut them open and scrape out the rich vanilla caviar inside. Gneiss Spice whole beans come from a small, certified organic farm in Madagascar, ensuring top quality and sustainable sourcing.

How Do I Make Vanilla Extract? It’s easy! Simply remove the beans from the package and slice them lengthwise to expose the fragrant vanilla caviar inside. Place the beans in an airtight quart jar and fill the jar with alcohol, making sure the beans are completely submerged. Give it a good shake, and then wait for the magic to happen!

Pro tip: Don’t forget to compost our packaging—it's plant-based and compostable!

How Many Vanilla Pods Do I Need? Since vanilla pods vary in size, it’s best to measure by weight rather than by the number of pods. To make this easier, we offer our vanilla in pouches based on the amount of paste or extract you want to create.

  • For 1 cup (8 fluid ounces) of single-fold vanilla extract, you’ll need 23 grams (0.8 oz), which is roughly 5–8 beans, depending on their size.
  • For 1 quart (32 fluid ounces) of single-fold vanilla extract, you’ll need 93 grams (3.3 oz), approximately 20–30 beans.

We recommend making at least 1 cup of extract at a time to ensure consistent flavor.
