Rustic Apple Galette with Homemade Apple Pie Spice

A galette is a rustic, freeform pastry that’s both elegant and simple—perfect for showcasing seasonal fruit like apples. In this version, we’re using our signature Apple Pie Spice, a blend of cinnamon, ginger, and nutmeg to bring out the best in fall’s favorite fruit. The warm spices enhance the natural sweetness of the apples and turns this classic French dessert into a cozy, spiced treat that’s as simple to make as it is to enjoy. If you’ve never made a galette before, don’t worry—this freeform pastry is all about keeping things simple, while still impressing at the table.

Ingredients

For the Pie Crust

  • 2 1/2 cups all-purpose flour
  • 1/2 lb (2 sticks) butter
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 8-10 tbsp cold water

For the Apple Filling

  • 5-6 apples, cored and thinly sliced
  • 4 tsp apple pie spice*
  • 2 tbsp sugar
  • 2 tsp lemon juice

*Homemade apple pie spice recipe included below.

Additional Ingredients

  • One egg
  • Sugar, for sprinkling on the crust
  • 2 tbsp butter, cut into small cubes or slices

Apple Galette Directions

To Make Homemade Apple Pie Spice

  1. Combine 3 tsp cinnamon, 3/4 tsp ginger, 1/8 of a tsp allspice or cloves.
  2. Using a microplane, grate approximately 1/4 tsp fresh nutmeg.
  3. Optional: For extra flavor, try adding 1/4 tsp of sumac for a bright, tangy twist, or 1/8 tsp of cardamom for a subtle, warm, and floral note.
  4. Stir to combine and use all of the spice in the galette. 

To Make the Pie Crust

  1. In a large bowl whisk together the flour, salt, and sugar. 
  2. Cut in the butter, and use your fingertips to combine the flour and butter, crumbling the butter into smaller pieces as you go.  
  3. Continue until the butter is in small, pea-size pieces and the mixture resembles coarse, wet sand. Alternatively, you can use a food processor, and pulse the butter into the flour mixture.  
  4. Add the cold water to the mixture 1 Tbsp at a time, mixing with your hands until it forms together as a slightly sticky dough.  
  5. Divide the dough into two evenly sized, separate balls and wrap in plastic wrap. Gently flatten each ball into a disc shape and place in the fridge for 1-2 hours, and up to 3 days. You can also freeze for up to 6 months. 

To Make the Galettes

  1. Preheat the oven to 350˚ F.
  2. Remove the dough from the refrigerator and let it sit for about 10-15 minutes to warm slightly.
  3. In a large bowl, mix the apples, apple spice, sugar and lemon juice until the apples are evenly coated. Set aside while you roll out the galette dough.
  4. Sprinkle a clean countertop with flour and, using a rolling pin, roll out a piece of galette dough into a large, even circle. It should be about 1/4” thick.
  5. One at a time, lay the apple slices on the dough in an overlapping, circular pattern, beginning at the center and working your way towards the outside. Leave about 2” around the edges for folding over the crust.
  6. Finally, fold the edges of the crust over in 5-6 different sections. Be careful not to press the crust down too hard on the folds as it may crack.
  7. Crack the egg into a small bowl and whisk until mixed together. Use a pastry brush to gently brush the crust of each galette, and then sprinkle with sugar. Place a few dots of butter onto the exposed apples.
  8. Repeat steps 6-10 with the second piece of galette dough.
  9. Set each galette on a baking sheet and bake 45 minutes, until the crust is golden brown. 
  10. Allow to cool for at least 10-15 minutes before cutting. 
  11. Serving Ideas: Pair with ice cream or homemade vanilla whipped cream. Enjoy!!
