This ground cassia cinnamon is the go-to spice in the U.S., known for its bold, sweet flavor. Ideal for baking cinnamon rolls, adding depth to curries, or spicing up your morning coffee. If you eat a lot of cinnamon, consider purchasing the milder ceylon variety, which contains lower levels of coumarin and is better for your liver.

Note 9/18/2024: Earlier this month, a Consumer Reports article came out regarding high levels of lead in cinnamon from many store-brands. At Gneiss Spice, each harvest of cinnamon is tested for heavy metals in an accredited food-safety lab. The current lead level is 0.38 ppm for Cassia Cinnamon and 0.56 ppm for Ceylon Cinnamon. These results are significantly below the FDA limit of 3 ppm.
