Makes approximately 8-12 oz of elderberry syrup.
INGREDIENTS:
- 1/2 cup dried elderberries
- 2 cups water
- 1 tsp cinnamon flakes
- Strip orange peel or 1 tsp dried orange peel
- 1 Tbsp fresh ginger or tsp dried ginger
- 2-3 whole cloves
- 1-2 star anise
- 1/2 to 2/3 cup raw honey
- optional: splash of raw apple cider vinegar

DIRECTIONS:
Step 1: Combine elderberries, spices and water in a sauce pan. Bring to a boil then lower heat and simmer until reduced by half, about 20 minutes.
Step 2: Take off heat and let steep for an hour.
Step 3: Mash and strain through a fine mesh sieve using the back of a wooden spoon to push out the liquid.
Step 4: Cool to room temp and stir in raw honey and vinegar if using. Store in the fridge for up to 3 months.
