Urfa Biber (Turkish Chile)
Urfa Biber are Turkish peppers picked when ripe and allowed to cure for a week to develop the smoky, earthy flavor. It's the star of this middle eastern cuisine, and I couldn't eat a bite of shakshuka without them! Sub urfa biber in for the Aleppo pepper in this recipe for yogurt-marinaded chicken kebabs.
