What is Xanthan Gum?
Xanthan Gum is a plant-based thickener and stabilizer made by fermenting sugar with the Xanthomonas campestris bacterium. The resulting powder is prized for its ability to bind, emulsify, and thicken mixtures, making it a versatile ingredient in the kitchen.

Homemade Vanilla Paste
Xanthan Gum is key to achieving the perfect consistency in homemade vanilla paste. Just 1/4 teaspoon per pint keeps vanilla seeds (caviar) suspended, ensuring they stay evenly mixed without sinking. Its thickening power creates a smooth, uniform texture. 

Gluten-Free Baking and More
Xanthan Gum is essential in gluten-free baking, replicating gluten’s elasticity and structure. It helps doughs hold together and rise properly, creating soft, chewy breads, cookies, and cakes.

Beyond baking, xanthan gum works wonders as:

  • A thickener in sauces and salad dressings for a creamy texture.
  • An emulsifier to combine ingredients that don’t typically mix, like oil and water.
