A specialty from Yemen, hawaij means "spice" in Arabic. Most households keep two versions. A savory once for stews and a sweet one for coffee. Cardamom adds an earthy depth, ginger adds a kick—it's probably not a coincidence that these spices are also good for digestion. This spice is added to the coffee grounds before brewing.
Directions: Mix up to 1/2 tsp spice (per brewed up) into coffee grounds. Brew as directed.
