Lemongrass (Cymbopogon citratus), essential to Thai cooking. Dried lemongrass can be used as a substitute when fresh is not available. One teaspoon of lemongrass powder equals one stalk of fresh lemongrass. Dried lemongrass should be used in broths or curries, where there is liquid to rehydrate it. Otherwise, it should be soaked for at least 30 minutes in warm water to soften it. Click here to read a test comparing the two!
